Ingredients

• 1 1/2 oz rum

• 3/4 oz lime juice, freshly squeezed

• 1 oz simple syrup

• Mint leaves, 6 - 8, plus extra for garnish

• Angostura bitters, a couple of dashes

• 2 oz Prosecco or Champagne

• Lime slices or wedges, to garnish

Instructions

In a mixing glass or shaker, muddle the lime juice, syrup, and mint.

Add in the rum, bitters, and the ice. Shake. Strain into a (coupe) glass, and top off with the Prosecco or Champagne.

Garnish with mint leaves and lime slices, if desired.
